Lagniappes

Lagniappe is a word used often in the Gulf States, especially southern Louisiana, to mean,
"a little something extra." At Rosemary's we present each table with a tantalizing bite-sized starter - a “gift from the kitchen” - before every meal. The term lagniappe derives from New World Spanish la ñapa, “the gift,” and ultimately from Quechua yapay, “to give more.” The word came into the rich Creole dialect mixture of New Orleans where it ultimately picked up its French spelling.
